Mashed Parsnips

1 lb parsnips 4 cups stock (chicken or vegetable) ½ cup milk ¼ cup butter 4 tbs. parmesan cheese Chopped spinach (optional) Salt and pepper to taste Boil parsnips in stock until softened about 15 minutes.
